In jazz, drummers use ghost notes (very soft snare hits). Apply the same to your castanets VST. Program ultra-low velocity (around 10-15) hits on the offbeats (the "and" of 2 and 4). These gentle clicks simulate the dancer's fingers brushing the wood and add incredible depth.
